In the course, the students learn about the structure of amino acids and proteins as well as their physical and chemical properties. By utilizing both physical and chemical properties, work is carried out experimentally and theoretically with tasks that support the understanding of the methods used for both the production of protein rich material and the analysis of protein content. Through this, the aim is for the students to gain a deeper understanding of the structure of proteins, acid-base properties and solubility ratios, as well as increase their skills in the laboratory As an example, the challenges of making “cascade utilization” of residual materials such as e.g. mask from beer production illustrated through PhD student work.
